Recipes for Potato Snacks on the Bike

Does any favorite recipes for potatoes to eat on the bike? I thought I’d seen a decent recipe or two for roasted potatoes, but I don’t know where it was that I saw them. I’ve seen a few for boiled potatoes. Thoughts?

I’ve taken roasted potatoes on long slow touring style rides in the past. Wrap them in foil or grease proof paper, keep in a jersey pocket to keep them warm. Munch at leisure, relatively moist, easy on the digestive system and slow release nutrition vs sugary snacks.

I’ve done basic roast potatoes. Usually Yukon Golds or equivalent. Peel, cut into bite-sized pieces, toss with a bit of olive oil, salt and pepper, place on parchmant on sheet pan and roast, turning occasionally until done to taste. Flavor options include grated Parmesan cheese, rosemary, and/or garlic.

They can be dry, especially if you roast them brown(tasty!) and need a water chaser.

Roast sweet potato is also good but is softer when cooked and usually requires a better container. Mixing mashed roast sweet potato with nut butter can be tasty but that’s a stop and eat snack, not an on-the-bike one.

A small baked potato ,cut ,add parmesan cheese ,salt & pepper , wrap in foil , the skin keeps in “ solid” in the pocket
