Wondering about the possibility of running an XTR FC-M9100-1 on a frame with 68mm BB shell and 142mm rear end 1x12 setup. Is this crank, regardless of setup, only able to achieve a 52mm chainline or is there a way (spacers, offset chainrings, etc) on this frame setup to get it to 47mm?

Using a 6mm offset chainring (example: https://alugear.com/chainrings-1x/231-round-for-shimano-dm-12sp-gravel.html) will give you a 49mm chainline. This usually works fine with most modern gravel 1x groupset (you may have issue if your chainstays are super short).
In theory you could move 2mm of spacers from the drive side to the non drive side to get a 47mm chainline, and add a 2mm of pedal spacers on the drive side to compensate for the cranks being off-center. This would increase the Q-factor by 4mm.
